Our grandparents often lived in isolation with long distances, rough unsealed tracks and with no refrigeration.

A side dish recipe that makes a change from ordinary mashed potatoes.
Boil potatoes until cooked. In the meantime, place softened butter, lemon rind, garlic, parsley in a bowl, and stir. Drain potatoes and mash. Add warm milk and butter mix and beat until creamy
This vegetable side dish recipe has a fresh taste of lemon
Cover sweet potato with cold salted water and bring to the boil. Lower heat and simmer until tender but not mushy. Preheat the oven to 200 C. Mix the grated lemon juice and brown sugar together and add 1/4 teaspoon salt. Place the sweet potato into a greased shallow ovenproof dish. Pour the lemon mixtre over the sweet potato and toss through. Grind the pepper over and dot with butter. Bake for approx 15 minutes, then remove from oven. Stir so as to bring the sweet potato that is at the bottom of the dish to the top. Bake for another 15 minutes or until golden. Serve hot
Place garlic in bowl; add lemon zest, lemon juice and mustard stir until smooth. Whisk in oil slowly until well blended. Add chives and season
Drizzle over boiled jacket potatoes and shallots diced
Boil beans until just crisp. Remove the peel from the lemon in stips. Cut the lemon peel into very narrow strips about 4 cm long
When the beans are done, drain the beans and place the garlic and oil in the same pan you cooked the beans in and saute for 1 minute. Add the beans and toss to coat them with the oil and garlic. Add the strips of lemon peel, lemon juice and pepper and toss. Spoon the beans into a serving dish and sprinkle with the cheese. Serve immediatley
