Hint When cooking a Lazy Cake Recipe have all ingredients assembled before you begin and have eggs and butter at room temperature
Easy Fruit Cake
- 1kg mixed fruit or any dried fruit you like
- 150g block fruit and nut chocolate
- 2 cups strong coffee
- 2 cups self raising flour
- Soak dried fruit overnight in coffee
- Add chopped chocolate to soaked fruit and the 2 cups S.R. flour
- Mix well and pour into lined cake tin and cook at 180c for 45mins to 1 hour or until skewer comes out clean
Pineapple Hummingbird Cake Recipe
- 3 cups plain flour
- 1 teaspoon bicarbonate of soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups sugar
- 1 1/2 cups vegatable oil
- 3 x 60g eggs (lightly beaten
- 225gram tin of undrained pineapple
- 2 cups mashed banana
- 1 cup chopped pecans
- 1 teaspoon vanilla essence
Cream Cheese Frosting
- 75 grams unsalted butter
- 250 grams softened cream cheese
- 1 teaspoon vanilla essence
- 2 cups sifted icing sugar(add a little at a time)
- Butter and sprinkle with flour a 25 cm ring tin
- Pre Heat oven to 180C
- Sift flour with bicarbonate soda, salt,cinnamon and sugar into a large bowl
- Make a well into the centre and add oil, eggs, pineapple, banana, pecans and vanilla essence
- Stir the mixture until just combined
- Pour into a the prepared pan and bake 1 hour 15 minutes or until risen and golden brown
- When cake is cool ice with cream cheese frosting

Chocolate Cake
1 cup sugar, ½ teaspoon coffee, 2 tablespoons cocoa, 2 1/2 tablespoons soft butter, 1 egg, 1-teaspoon vanilla essence, ½ teaspoon bi-carb soda, 1 ½ cups S.R. flour.
Mix sugar, coffee and cocoa in dish, add butter to ½ cup hot water and pour over. Stir till butter is dissolved, add egg and beat well. Add vanilla essence and S.R. flour. Dissolve bi-carb in ½ cup boiling water and add to other ingredients. Mix thoroughly. Pour mixture into a ring tin. Cook in moderate oven and cook for 25 to 30 minutes. Cover sides and top of cake with frosting.
Frosting: 450grams cooking chocolate, 1 teaspoon vanilla, 2 cups sour cream, ½ teaspoon salt. Melt the chocolate in a bowl over simmering water. Remove from heat and stir in ½ cup sour cream. Stir chocolate into remaining sour cream and add vanilla and salt. Allow to cool.
Chocolate Cake No2
Cake: 2 cups sugar, 1 cup cocoa, 1 ½ teaspoon baking powder, 2 eggs lightly beaten, 125grams melted butter, 1 ¾ cup S.R. flour, 2 teaspoons cinnamon, 1 teaspoon salt, 1 cup milk, 2 teaspoons vanilla
Frosting: 450 grams cooking chocolate, 1 teaspoon vanilla essence, 2 cups sour cream, ½ teaspoon salt
Method: Preheat oven to 180. Grease two 9” cake pans. In a large bowl combine all dry ingredients. Stir in eggs, milk and melted butter until fully combined. Add 1 cup boiling water and vanilla essence and stir thoroughly. Cake will have a runny consistency this is how it is supposed to be. Pour into prepared pans and bake until cooked. (approx 35 to 40 minutes). Cool in pans. Leave cake to go cold before spreading with frosting
Frosting: Melt the chocolate in a bowl over simmering water. Remove from heat and stir in ½ cup sour cream. Stir chocolate mixture into remaining sour cream and add vanilla and salt. Allow to cool. Slice tops of cakes to make flat surface. Spread 1/3 of frosting over top of one cake. Complete with the other cake. Spread remaining frosting over top and sides. Refrigerate for one hour before serving
Carrot Cake
- 1 cup grated carrot, 400g can crushed pineapple (strain ½ juice from can), 1 cup plain flour, 1 teaspoon baking powder, ¾ teaspoon baking powder, ½ teaspoon salt, 1 teaspoon cinnamon, ¾ cup sugar, 2 eggs, 5 tablespoons cooking oil, ½ cup chopped walnuts or pecans
Frosting
- 60 grams margarine
- 125grams cream cheese
- 250 grams icing sugar
- 1 teaspoon orange peel, grated
Combine in a bowl flour, baking powder, baking soda, cinnamon, salt, eggs and oil.
Mix in grated carrot, pineapple and walnuts. Place in a greased and lined cake tin. Bake at 180c for 35 to 40 minutes. Cool and top with icing. - Keep refrigerated
Banana Cake
1 cup S.R. flour, 1 cup sugar, 1/2 cup milk, 2 tablespoons butter, 2 eggs, 1 ripe mashed banana, 1 cup chopped pecan nuts, ½ teaspoon vanilla essence.
Put all ingredients in dish and add melted butter. Beat well for approx 3 minutes. Place in greased ring tin. Bake 30 minutes in moderate oven. When cool ice with lemon icing.
Easy Madeira Cake
½ cup Milk, 125g Butter, ¾ cup Caster Sugar, 2 Eggs, 1 cup Self Raising Flour, 1 tablespoon Cornflour, ½ teaspoon Vanilla Essence. Place all ingredients in bowl, and beat well for 5 minutes. Pour into prepared 22cm x 8cm x 11cm bar tin. Bake in moderate oven for 1 hour. Ice on top with vanilla icing when cool
Chocolate Roll
- 3 large eggs
- 1/2 cup plain flour
- 2 teaspoons golden syrup
- 1/2 teaspoons cream of tartar
- 1/2 cup caster sugar
- 2 teaspoons cornflour
- 1/2 teaspoon baking soda
- 1 tablespoon cocoa
- enough jam to spread on cake
- whipped cream to spread on cake
- Seperate whites from yolks of eggs
- Whisk whites to a stiff but not dry froth. Add egg yolks
- Gradually add sugar and beat well for about 10 minutes
- Sift dry ingredients three or four times. Fold into mixture. Lastly add warm syrup
- Pour mixture into a lamington tin which has been lined with a sheet of greaseproof paper
- Bake in moderate oven (170 degrees) for about 15 minutes
- Spread a damp warm tea towel on work surface turn out cake. Roll cake up loosley in tea towel. Leave for approx 2-3minutes. Unroll spread with raspberry jam and whipped cream. Roll up again and serve.
Welsh Tea Cake
250ml cold tea, 1 egg, 1/12 cups sultanas, 1 3/4 cups brown sugar, 2 1/3 cups S.R. flour.
Mix all ingredients together. Pour into greased bar tin. Cook in moderate oven for
1 to 1 ½ hours. When cold slice and spread with butter.
