Mexican Salad

This colourful and crunchy healthy salad recipe holds up well for hours.

  • 1 can corn, drained
  • 1 can kidney beans, drained
  • 1 cup diced seedless cucumber
  • 1 cup diced green capsicum
  • 1 ripe plum tomato, cut into 1/4-inch dice
  • 4 shallots, thinly sliced
  • 2 tablespoons chopped flat-leaf parsley
  • 1/2 teaspoon minced garlic
  • 1/3 cup olive oil
  • 2 tablespoons red-wine vinegar
  • 1 teaspoon sugar
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon curry powder
  • Salt and freshly ground black pepper, to taste

Combine the corn, beans, cucumber, green pepper, tomato, shallots, parsley and garlic in a large bowl. In another bowl, whisk together the remaining ingredients. Toss with the vegetables. Refrigerate, covered, for 4 hours for the flavours to blend.

Greek Salad

A favourite salad recipe that demonstrates the charm and colour of the fresh and simple.

Ingredients Dressing

  • 1 teaspoon crushed garlic,
  • 1teaspoon Dijon mustard,
  • 1/3 cup Italian dressing
  • Mix all together

Salad Ingredients

  • ½ cup celery diced,
  • cherry tomatoes cut in half,
  • ½ red capsicum cut into cubes,
  • ½ green capsicum cut into cubes,
  • continental cucumber cut into cubes,
  • ½ red onion diced finely,
  • 1/3 cup black olives seeded,
  • ¾ cup feta cheese cut into cubes

Place celery, tomato, capsicum, cucumber, onion and olives in salad bowl. Sprinkle feta, and dressing over salad, toss and serve



Coleslaw

  • 4 cups cabbage shredded very finely,
  • 2 tablespoons carrot grated,
  • 1 tablespon onion grated,
  • 1 red apple unpeeled and finely chopped,
  • 1/4 cup red and green capsicum diced,
  • a little pineapple finely diced,
  • 1/2 cup coleslaw dressing

Coleslaw Dressing

  • 142ml sour cream,
  • 142ml mayonnaise,
  • 5 tablespoons cider vinegar,
  • 1 teaspoon mustard powder,
  • 2 teaspoons caraway seeds,
  • a pinch of caster sugar,
  • salt and freshly ground pepper.

Whisk all ingredients except sugar, salt and pepper, stir in sugar and seasoning



Pear and Grapefruit Salad

  • 3 ruby grapefruit,
  • lettuce leaves torn,
  • 2 pears,
  • 200g feta cheese

Wine-Honey Dressing

  • 1/3 cup chilled sparkling white wine,
  • 2 tablespoons olive oil,
  • ¼ cup honey,
  • 1 ½ tablespoons wholegrain mustard,
  • 1 garlic clove, crushed

Remove the rind and pith from grapefruit. Cut fruit into thin rounds (reserve juice) Combine grapefruit, lettuce and pears in a salad bowl and crumble the feta over. Cover and refrigerate until ready to serve

Dressing:

Place wine, oil, honey, mustard and garlic in a jug. Add reserved grapefruit juice and whisk to combine. Season with salt and pepper. Pour dressing over salad. Toss gently to combine.


Cucumber, Spinach and Coconut Salad

  • Baby spinach leaves and rocket,
  • cucumber cut chunkily,
  • avocado chopped,
  • shredded coconut,
  • tomatoes chopped,
  • 2 x limes

Mix all together except limes. Juice the limes over the salad. Toss to combine and serve



Rocket, Pear and Feta Salad

  • 1 bunch rocket (or similar),
  • 2 pears cored & sliced,
  • 1 avocado peeled & sliced,
  • 4 slices bacon grilled until crisp- torn in to small bits,
  • feta cheese,
  • ½ cup black olives,
  • ¼ pine nuts-toasted or almonds chopped

Dressing

  • ¼ cup oil,
  • 2 tablespoons red wine vinegar,
  • 1 tablespoon honey or maple syrup,
  • 2 teaspoons grain mustard

In a large bowl, combine rocket, pears, avocado, and bacon. Top with crumbled cheese, olives and pine nuts. Dressing Whisk all ingredients together in a jug. Drizzle over salad just before serving.

This healthy salad recipe would also be delicious with blanched asparagus added. Plunge the asparagus into boiling water for approximately 40 to 60 seconds, drain well and refresh in cold water.

Cucumber and Radish Salad Recipe

Salad Ingredients

  • 1cucumber thinly sliced,
  • 2 shallots,
  • ¼ cup thinly sliced radishes,
  • ¼ teaspoon salt

Dressing Ingredients

  • 2 tablespoons white wine vinegar,
  • 1 teaspoon sugar,
  • 1 teaspoon dried dill,
  • 1 teaspoon Dijon mustard,
  • ½ cup sour cream,
  • black pepper

To Prepare Salad:

Sprinkle the cucumber with salt and let stand for approx 1/2hour. Drain cucumber well then combine the cucumber with the radishes and the shallots. Pour the dressing over the salad ingredients, toss and chill for 1 hour.

To prepare dressing

Whisk the sour cream with the vinegar, sugar, dill, mustard and season with the pepper



Cabbage Salad

Shred Cabbage finely, mix together 1/2 cup lemon juice, 2 gloves garlic, 1/2 cup olive oil. Then add 1 teaspoon sugar, 1 teaspoon mustard, salt and pepper. Whisk until thick. Add 1/2 cup chopped mint, handful of sultanas add 2 finely diced apples with skin on. Toss all into salad bowl together just before serving



Oriental Fried Noodle Salad


Salad Ingredients

  • 1/2 cabbage, shredded finely,
  • 6 shallots chopped,
  • 100grams pinenuts or lightly roasted silvered almonds,
  • 1 pkt Chag's Fried Noodles 100gram(original flavour)

Dressing

  • 1/4 cup white vinegar,
  • 1/4 cup caster sugar,
  • 1 tablespoon Soy Sauce,
  • 2 tablespoons sesame oil,
  • 1/2 cup olive oil.

Combine all the dressing ingredients in a saucepan. Stir well over low heat until sugar is disolved. Cool. Toss the cabbage, chopped shallots and pinenuts or silvered almonds in a salad bowl. Add dressing and mix well. Just before serving add the noodles and toss thoroughly. To make complete meal just add chopped cooked chicken or pork.


Peach Salad

  • 4 slices prosciutto or bacon, extra virgin olive oil, 1 x 400gram can sliced peaches in natural juice drained, 1 x small can lychees drained, 200grams crumbled feta cheese, mixed lettuce leaves, 1/4 lime juice, 1 teaspoon dill, 1 teaspoon green peppercorns crushed
  • May not need whole can of peaches or lychees
  • Cook prosciutto until crisp about 2 minutes each side and break into pieces. Spray peaches with olive oil and cook for about 2 minutes each side until lightly browned, Place in a salad bowl and allow to cool. Once peaches are cool add lettuce leaves and feta cheese to salad bowl. Toss salad. Cut lychees in half and add to salad. Add dill, peppercorns and prosciutto. Mix 1 tablespoon olive oil and the lime juice until well combined. Pour over dressing and serve

Waldorf Salad

  • 2 cups diced red apple skin on, 2 tablespoons lemon juice, 1 teaspoon sugar, 1/2 cup mayonnaise, 1 cup thinly sliced celery, 3/4 cup raisins, 1/2 cup coarsely dhopped walnuts or pecans, lettuce leaves, parsley

Mix together lemon juice, sugar and 1 tablespoon of mayonnaise. Add the diced apples and toss lightly. Add celery, raisins, walnuts, and remaining mayonnaise. Toss well then spoon into a bowl lined with lettuce leaves dipped in lemon juice. Garnish with slices of red apple and parsley.



Condensed Milk Salad Mayonnaise

  • 3/4 tin condensed milk, 1 teaspoon dry mustard, 1/3 cup white vinegar, ½ teaspoon salt
  • Mix mustard and salt into condensed milk then add the vinegar. Mix well, allow to stand until thick


Potato Salad

Dice potatoes into small squares and cook until just soft. Drain and add condensed milk mayonnaise and onion diced very small while potatoes are still warm. Toss so all potatoes are coated. Sliced hard boiled eggs and add to salad. Sprinkle with chopped parsley and chill. More mayonnaise may be need to be added once potato salad is chilled.



Lettuce and Egg Salad

Shred lettuce very finely, boil eggs until hard and dice, toss together in bowl with condensed milk mayonnaise (above)



Pawpaw and Mango salad in Pineapple

  • 1 ripe pineapple,
  • 1 ripe pawpaw,
  • 1 large mango,
  • 3 kiwi fruit,
  • assorted salad greens

Dressing:

  • lime or lemon juice,
  • generous pinch of chilli powder or a few dashes of Tabasco sauce.
  • Fresh mint leaves, chopped,
  • salt to taste

Cut pawpaw and mango into strips. Peel and quarter kiwi fruit. Cut the pineapple in halves lengthways, through the leafy crown, remove pineapple from shell and cube flesh, discarding core. Arrange the fruits in the pineapple shell and serve over a bed of salad greens. Combine all dressing ingredients and sprinkle over salad. Cover with plastic wrap until ready to serve

Hawaiian Salad

  • 1 ripe pineapple,
  • 1 small onion,
  • chopped, 1 cup sliced celery,
  • 2 cups cooked brown rice,
  • 1 cup pecans, chopped,
  • ¼ cup mayonnaise,
  • few drops hot chilli sauce

Slice pineapple in halve lengthwise including green top. Cut out flesh of pineapple and cut into chunks. Mix together onion, celery, rice, pecans and pineapple. Stir mayonnaise and chilli sauce together until evenly mixed. Add to rice mixture and combine lightly. Chill salad and then spoon into pineapple shells and serve
