Mushroom Soup

  • 30g butter, extra if needed
  • 1 small onion
  • 250gm mushrooms washed and sliced
  • 1/4 cup flour
  • 2 1/2 cups well flavoured chicken stock
  • 2/3 cup milk
  • salt and pepper

  • Heat the butter and fry the onion until soft
  • Add the mushrooms and saute for about 5 minutes
  • Stir in the flour and cook for 2 minutes
  • Allow to cool slightly, then stir in the stock and milk gradually
  • Bring to the boil stirring all the time
  • Season well, cover and simmer gently for about 20 minutes
  • Serve hot garnished with chopped parsley
  • Nice with toast bits-cut crust from white bread, butter, place in patty cake tins and place in very hot oven until brown


  • Pumpkin Soup

    • 500g pumpkin, 30g butter, 1 onion, 1/2 teaspoon sugar, 3 cups water, 1 packet Chicken Noodle Soup, 1/2 cup cream, salt and pepper, chopped chives or parsley
    • Peel pumpkin and cut up into fairly small pieces. Saute, in melted butter, for 10 minutes with chopped onion and sugar. Add water and ring to the boil. Stir in chicken noodle soup and simmer until pumpkin is tender (approx 20 minutes) Put in blender. return to saucepan and reheat. Season to taste. Stir in cream and 1 tablespoon chives or parsley. Do not allow to boil.


    Tomato Soup

    250g cheery tomatoes, halved, 2 garlic gloves, unpeeled, ¼ teaspoon castor sugar, 1 ½ tablespoons olive oil, ½ small onion, finely chopped, 1 ½ cups chicken stock, 1 tablespoon fresh thyme or small sprinkle of dried thyme

  • Preheat oven to 200c. Place tomatoes; cut side up in a lightly greased ovenproof dish. Add unpeeled garlic. Sprinkle with caster sugar. Season with salt and pepper. Drizzle with 1 tablespoon olive oil. Roast for 15 minutes or until collapsed slightly. Remove from oven. Heat remaining oil in saucepan over moderate heat. Add onion; cook stirring until onion is softened. Remove skin from garlic gloves and mash with a fork. Add garlic, tomatoes with pan juices and stock to saucepan. Bring to the boil. Reduce heat to low. Simmer uncovered for 5 minutes. Add thyme. If using dried thyme be carefully as it can overtake the other flavours. Serve 1 to 2


  • CHICKEN SOUP



    • Chicken Pieces or small chicken, 1 tablespoon olive oil, 1 chopped onion, 1 chopped carrot, 2 sticks celery sliced, 1 potato cut into small cubes, 4 cups chicken stock, pepper corns, 1 tablespoon rolled oats, 1 tablespoon rice.
    • Heat pan add olive oil, add onion, carrot and celery. Simmer until softened; add chicken pieces, chicken stock, peppercorns, rolled oats and rice. Simmer until chicken is cooked. Cook cubed potato in microwave until cooked. Add potato to soup.
    • NOTE: To make into chicken stew add more rice and rolled oats.




    Never Fail Pikelets

    • Beat 2 eggs with 3 tablespoons sugar. Add 1 cup milk with 1 teaspoon bi-carb soda dissovled in it. Sift in 1 1/2 cups Self raising flour. Stir slowly one way. Fianlly add 1 1/2 teaspoons cream of tartar and a little salt. Place a teaspoon into a hot greased pan and cook until small bubbles appear on the surface about 1 minute, then flip over.


    Pineapple Pikelets

  • 1 cup SR flour, pinch salt, ½ teaspoon bi-crab, 3 tablespoons sugar, 1 egg, ¾ cup milk, 1 dessertspoon margarine, ½ cup drained crushed pineapple
  • Put flour, salt & sugar into bowl. Add lightly beaten egg and milk, to which soda has been dissolved, fold in melted butter. Add pineapple


  • Pancake Recipe

    • 1 cup plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 egg
    • 1 1/2 cups milk
    • 1 dessertspoon butter melted
    • oil for frying

  • Sift flour, baking powder and salt in bowl
  • Make a well in centre and add egg, milk and melted butter
  • Using a wooden spoon, gradually draw in flour
  • Beat well, cover and leave to stand for 1 hour
  • Grease and heat frypan
  • Pour batter into a jug and pour enough batter while titling the pan, to coat the bottom.
  • Cook until small bubbles appear on the surface about 1 minute, then flip over
  • Place cooked pancake on a clean tea towel, cover with another clean tea towel, while cooking the rest of the pancakes
  • Makes 10 to 12 pancakes, serve warm sprinkled with sugar and rolled up.
  • Pastry

    • 3 tablespoons margarine, 3 tablespoons milk, 2 eggs, beaten, 1 cup flour
    • (add 2 tablespoons sugar for a sweet pastry)
    • Method
    • Melt margarine with milk in a saucepan or in a microwave. Remove from the heat and add flour and beaten egg. If to sticky, add more flour. Chill for 1 hour, use as required.

  • This is an easy, no mess and never fail recipe for pastry.



  • Chocolate Rum Tart

    • 60g butter, 60g flour, 600ml milk, 1 egg, ½ cup sugar, 90g chocolate, 1 or 2 tablespoons rum
    • Melt butter in saucepan, stir in flour and cook for 1 minute, without browning. Stir in milk, sugar and chopped chocolate. Cook over heat until mixture thickens, stirring constantly. Add beaten egg yolks and stiffly beaten egg whites, then rum, cool slightly. Fill tart shell, chill. Decorate with whipped cream and grated chocolate


    Zucchini Slice

    • 375g zucchini
    • 3 rashers bacon
    • 1 cup self raising flour
    • 5 eggs
    • 1 large onion
    • 1 cup grated cheddar cheese
    • ½ cup oil
    • salt and pepper
    • Grate unpeeled zucchini; finely chop onion and bacon
    • Combine zucchini, onion, bacon, cheese, sifted flour, oil and lightly beaten eggs, season with salt and pepper
    • Pour into well greased lamington tin (base measures 16cm x 26cm) bake in moderate oven 30 to 40 minutes or until browned


    Altogether Quiche

    • 4 eggs 1 cup milk 1 cup chopped ham and bacon ½ packet scone mix 4 chopped shallots 2 tbsps. melted butter salt & pepper cheese
    • Mix all of the above in a container Place in a grease pie plate Grate ½ cup to 1 cup of cheese on top. Cook for 35 to 40 minutes at 190 C Tomato or capsicum may be added Instead of ham seafood may be used. When cooked the mixture comes to the top and the scone mix forms the base

    Pork Chops with chutney

  • Grill pork chops on one side. Spread uncooked side with chutney and sprinkle with grated cheese, place under grill until golden

  • Tomato Relish

    • 500 grams tomatoes and onions, 1 tablespoon curry, 1 tablespoon mustard, ½ tablespoon salt, 1 cup vinegar, 1 cup sugar, pepper, 1 tablespoon cornflour.

    • Slice tomatoes and onions, Place all other ingredients except cornflour in saucepan and boil for approximately 20 minutes. Mix cornflour with a little water to make a runny paste and add to relish too thicken. Cool and jar.


    Easy Ginger Beer

  • Juice 4 Lemons, 1 Large Tablespoon Ginger Powder, 4 Cups Sugar, 24 Cups Water.
  • Method
  • Put In Large Container And Stir Until Sugar Dissolves, Strain And Put Into Bottles. Add 3 Sultanas And Seal. When Sultanas Float To Top (Approx 3 Days) It Is Ready To Drink.


  • PIZZA

    Pizza Dough

  • 7g sachet dried yeast, 2 cups plain flour, 1 teaspoon sugar, ¾ cup warm water, pinch salt.
  • Stir water into yeast and sugar, make well in centre of sifted flour and salt, stir in yeat mixture, mix to firm dough, knead on floured surface until smooth. Roll out to fit pizza tin. Grease pizza tin first.
  • Pizza Topping

  • 2 teaspoons oil; 1 clove garlic; 1 onion; 400g can tomatoes; ½ teaspoon basil; ½ teaspoon oregano; 185g mozzarella cheese; ¼ cup parmesan cheese; 250g salami; 1 green pepper; 125g mushrooms; 45g can anchovy fillets; 45g stuffed olives; salt & pepper.
  • Heat oil in pan, add crushed garlic and finely chopped onion, cook until onion is transparent. Add undrained tomatoes; mash well; add basil and oregano; bring to boil; reduce heat; simmer uncovered 15 minutes; stirring occasionally. Season with salt and pepper, cool. Spread over pizza base. Combine grated mozzarella cheese with parmesan cheese; sprinkle half of mixture over pizza. Top with sliced salami, finely chopped pepper, sliced mushroom and well drained and chopped anchovy fillets. Sprinkle with sliced olives and remaining cheese. Bake in hot oven 20 – 30 minutes with oven on 250 C.


  • Fettucine Carbonara

  • 6 rashes bacon, 1 large onion, chopped, 375 mls carnation milk, 2 egg yolks, ½ cup grated parmesan cheese, ¼ teaspoons paprika, pepper, 250g fettucine, cooked, chopped parsley
  • Remove rind from bacon and cut bacon into thin strips. Saute with onion until crisp. Drain off excess fat. Pour in combined carnation evaporated milk, egg yolks, parmesan cheese, paprika and pepper. Add cooked fettucine and toss over low heat until combined and sauce thickens, 2-3 minutes. Serve sprinkle with chopped parsley
